Small-group Azores cooking classes shaped by what we picked from the farm that morning. Start in the garden choosing what to cook with our kitchen team. Then prep, cook, and gather at the table for the meal you just made. Traditional Azorean cooking, seasonal preserving, sourdough, wood-fired pizza, fermenting, herbal infusions, low-glycemic baking — built around what's in season. The meal is included.
The Malaca Farm Tour is a ninety-minute walk through the syntropic agroforestry fields and food forest of our regenerative estate. Your guide covers the thinking behind syntropic farming — how the system layers trees, shrubs, and ground crops to build soil and biodiversity over time — with stops to taste what's in season along the way.

Six nights on the farm, learning to turn land into a food forest — on seven acres that were monoculture passionfruit last spring. You'll read the soil in three open pits, design a syntropic planting one meter at a time, and put it in the ground yourself. Along the way you'll see what worked and what didn't, including an orchard we replace ten percent of every year and coffee we planted before we understood shade. Sixteen places, all meals and instruction included, and you leave with the manual we're writing as we go.
