Eating well, we have learned, is a question of who you sit with as much as what is on the table. At VIVA Quinta, dining is reserved for guests of our stays, students of our classes, and walkers of our farm tours.





A slow morning ritual: bread fresh from the oven, eggs from our hens, fruit picked the day before, and whatever the season is offering — served at your table on the patio or in the dining room. Add it to your stay when you book, so we can have it waiting for you each morning.
The Malaca Farm Tour is a ninety-minute walk through the syntropic agroforestry fields and food forest at the heart of our regenerative estate. Your guide shares the story of the land — the thinking behind syntropic farming, how the system layers trees, shrubs, and ground crops to mimic natural forest succession, and the slow work of building soil, biodiversity, and abundance from the ground up. You'll move through beds of seasonal vegetables and herbs, past fruit trees and native species, with time to ask questions, taste what's in season, and leave with a clearer sense of how food can grow in harmony with the land rather than against it.


Start with a mocktail on the oceanview patio, then walk an hour through Malaca's syntropic agroforestry fields — harvesting the vegetables, herbs, and fruit you'll cook with. Back in the kitchen with our chef, you prep what you picked alongside other local Azorean ingredients and cook your meal in the wood-fired oven. Then you sit down together to a meal that is entirely your own — unhurried, ingredient-honest, and shaped by what the farm offered that day.
